Saved flights go into the Flight Simulator Files folder by default - you are not even given an option...

Flight Plans can be located/saved ANYWHERE and can be loaded from any location! I have hundreds and they are gathered in various folders by (mostly) geography. I generally keep only saved flights and config files in the default folder.

Flight recordings seem to be saved in the 'Files' folder also - and your logbook is located there.
