When you unzip the downloaded folder, you move it to your Community folder. To uninstall it, just move or delete it from your Community folder.

The line in the cameras.cfg which affects the cockpit viewpoint is this one:

Yes they will - the Deluxe and Premium Deluxe versions have more hand-crafted airports and additional aircraft than the Standard, the base sim is common to all versions.
