Are Microsoft the only place that sells Addons for Xbox?

I got XBOX as a gift, MS prices for Xbox addons are way up there. Ripping us off again is there anything out there we can do about it apart from buy new PC and switch back.

If all you need is a joystick, the Thrustmaster T.Flight Hotas One is your best bet: https://www.windowscentral.com/best-xbox-joysticks-microsoft-flight-simulator

I also use a cheap & cheerful Logitech wireless keyboard & mouse which work perfectly in MSFS.

Yes, if you're looking for aircraft and scenery add-ons etc., then the built-in Marketplace is the only option for Xbox users. Note that prices are largely set by the add-on developers, not Microsoft.

You really don't need add-ons right away. The default MSFS is pretty darn good right out of the box. Spend time with that first.
