How do I quit time compression mode??

This mode is toggled on with the 'r' key and a plus or minus key. The sim then goes into fast forward or slow motion.

 

How do I quit this mode so that I can start using the plus or minus key for something else (like zoom in and out)?

Just use R and + or - to return to zero acceleration.

This "adjust up/down until"-type function is not just sim Rate, but also any function that can be adjusted the same way; these come to mind: Ctr Shift Z adjusts Altitude Hold with +/- until you click the screen to disengage; Ctrl Shift H, the heading hold; then you can adjust radio frequencies the same way, I think (never actually done that one). Nothing special, just another way to do things...
