You cannot disable it, but you can change the eyepoints for those 2D views, so the VC does not interfere. This will involve modifying the panel.cfg, and no doubt adding eyepoint parameters to each of those views.
Here's a section from our 737 panel.cfg, that we are modifying so the defualt 737 with VC can be used with the panel, without it interfering with the VC.
VIEW_RIGHT_WINDOWS=31 // RIGHT COCKPIT VIEW
VIEW_RIGHT_EYE=2.0, 0.0, 0.0 // Adjust last value to fore and aft
VIEW_REAR_RIGHT_ZOOM=1.5 // REAR RIGHT COCKPIT VIEW
VIEW_REAR_RIGHT_WINDOWS=32
VIEW_REAR_ZOOM=1.5 // REAR COCKPIT VIEW
VIEW_REAR_WINDOWS=33
VIEW_REAR_LEFT_ZOOM=1.5 // REAR LEFT COCKPIT VIEW
VIEW_REAR_LEFT_WINDOWS=34
VIEW_LEFT_WINDOWS=35 // LEFT COCKPIT VIEW
VIEW_LEFT_EYE=-1.0, 0.0, 0.0 // Adjust last value to move fore and aft
VIEW_FORWARD_LEFT_WINDOWS=36 // FORWARD LEFT COCKPIT VIEW
VIEW_FORWARD_LEFT_DIR=7.0, 0.0, 330
VIEW_FORWARD_LEFT_EYE=-1.0, 0.0, 0.0 // Adjust last value to move fore and aft
VIEW_UP_WINDOWS=37 // LANDING VIEW
VIEW_FORWARD_ZOOM=.75
VIEW_UP_DIR=9.6, 0.0, 0.0 // VIEW DIRECTION FOR LANDING VIEW!
VIEW_UP_EYE=0.0, 0.0, 2.3 // Adjust last value to move fore and aft
VIEW_DOWN_WINDOWS=38 // CABIN VIEW
VIEW_DOWN_DIR=0.0, 0.0, 0.0 // VIEW DIRECTION FOR CABIN VIEW!
VIEW_REAR_RIGHT_UP_WINDOWS=39 // RIGHT WING VIEW
VIEW_REAR_RIGHT_UP_DIR=0.0, 0.0, 90
VIEW_REAR_RIGHT_UP_EYE=0.0, -1.38,-18.57 // Adjust last value to move fore and aft
VIEW_REAR_LEFT_UP_WINDOWS=40 // LEFT WING VIEW
VIEW_REAR_LEFT_UP_DIR=0.0, 0.0, 270
VIEW_REAR_LEFT_UP_EYE=0.0, -1.33, -18.73 // Adjust last value to move fore and aft
VIEW_FORWARD_LEFT_UP_WINDOWS=41 // SEAT VIEW
VIEW_FORWARD_LEFT_UP_DIR=7.0, 0.0, 270
VIEW_FORWARD_LEFT_UP_EYE=0.0, -1.28, -20.27 // Adjust last value to move fore and aft
VIEW_FORWARD_DIR=4.5, 0.00, 0.00 // MAIN PANEL
VIEW_FORWARD_ZOOM=.75 // Adjust to 1.00 if you want a narrower view
VIEW_FORWARD_EYE=0.0, 0.0, 1.75 // Adjust last value to move eyepoint fore and aft
You have three parameters for the "VIEW_XXX_EYE":
In order they are the x,y, and z axis, where:
x moves the eyepoint left/right,
y moves it up/down
and z moves it forward/back
As you will see, we only added the eye point parameters where it was necessary, thus not all the views have them.
I can't be of more help than this at the moment, but I'm sure someone might have the time to elaborate. :-)

What you're describing (looking from the flat panel out the side) is not the virtual cockpit.
I believe what you are referring to is the 2D pictures associated with the 2D panel (i.e. you can only get 9 different views: panel, front-left, front-right, right, left, rear-left, rear-right, rear, and down). This is part of the normal 2D panel, not the 3D virtual cockpit (in which you can pan in infinite control).
These image files should be in the /panel folder. Delete them and you rid yourself of the old 9-view cockpit interiors
Thanks for the help but the only bmp files in the panel folder are the ones accociated with the panel i want to use, no other.
Thanks Lou, i shall give it a try.

Hi Lou, just a thought, maybe the tip that you gave me should be put up somewhere for those having the same problem as i did. Maybe an OPS-ED ?
