I am currently working on a repaint for the fokker 100 and I went to preview it by opening it with FS2002. But when I opened the aircraft, the whole aircraft was in a beige color and I couldn't see anything painted before. How do I fix that?

Either your textures are not in the proper folder, named incorrectly or they are the wrong format. FS won't use 24 bit bmp files.

Make sure you have set your bmp to 256 colours - I use Photoshop and you need to convert it to Indexed colour mode with the Image/Mode menu. Also check the aircraft.cfg file - if you are using a texture.x folder, make sure it's pointing at the right place for your repaint.
