I got no idea. I would love to know how to though.

Unfortunately, you need to get the image out to video and then digitize it again to make the AVI file.
If your video card has TV out, you are set. Just tape the playback. Or you can use something like the TView Gold device to output VGA to Analog video signal.
You can then digitize the video into an editor and create your AVI.
Unfortunatly, I can't be more specific since there are so many products that can do this. Essentially, you need to through money at the problem.

This tutorial was written for BattleField 1942, but it will work in almost any game. Beware, though. When recording, FPS will drop severely. I get about 40 or 50 fps in BF1942, but when recording, it is down to between 3 and 5.
Have you tried through media player?
Explain a little more what you mean by a flight video? something you created using the FS recorder? If so, then use a screen recorder like I do ( I use ZD Soft Screen Recorder - free to try ). After many, many hours of recording I find this one the best, better then Fraps. Anyway, when you use it you can specify what format you want it recorded in. There are also many converter programs to try for free.
Why is anyone asking about something from 2005? That is 7 years ago and Kevin hasn't made a post in 2012.
