Be very light on the pedals! I've flown a real Extra300L and I can tell you the default Extra has an overactive rudder. I think it had to be that way in order for it to to do hamerheads and other aerobatics, but on the ground it's way too sensitive.
One thing that helps me out is only throtle up going straight, and coast for the stearing. If you need to turn sharp, full rudder and brake on same side and add a "little" power.
Takes a little getting used to, but i asure you it's possible
Thanks for the tips. I gave up and shifted to the Baron. I'm flying it for the first time and am getting used to it. One thing I learned--don't turn off the LALT, RALT switches. You lose electric power quickly. I noticed the AP had shut itself off, and my fuel gauges started to drop to "empty." Needless to say I turned the alternators back on in a jiffy. Oh what fun!
