You can assign any available animations to any FS9 recognized key(s) or controller buttons. But you cannot add more doors to an existing model.

In addition to wing fold and tailhook, you can use concord visor extend, concord visor retract, and water rudder.

If the doors are modelled then the assigned commands will be given with the model

Any commands will be compiled into the model and all opening doors have to be modelled, they are not user editable

What actual model/models are you referring to.

    Press more keys.
As an example if the model has more than one passenger door (cargo etc ), as well as pressing the 'E' key try E1 E2 E3 might? open moor doors for you.
Also some of the POSKY (Now SkySpirit I believe) aircraft come with its own utility that will open doors/provide a pushback/tug vehicle /load cargo etc you could check those out .If you go down that route and your a relative novice to the sim world then read Posky/Skyspirit instructions carefully though.
