Is there any point to downloading AI stuff from planes other than in the US if you don't fly elsewhere? There are tons of European and Asian airlines but i normally don't fly there.

Sure, if you're at an int'l airport. For example, my home airport is McCarren in Vegas. I know Virgin Atlantic and Korean Airlines fly in and out of it, so I added those to make it realistic, along with Philippines Airlines.

The only drawback to having AI from regions that you don't fly to is the added load time FSX will have due to the extra number of planes you will have in your library. Don't worry though, it is not that noticeable unless you have a lower-end system.
But the advantage is like KingNorris said, if you fly to a major int'l airport, you could see some non-us domesticated airlines.
Exactly!!

Well i typically go to an airport, like I'm in Orlando, KMCO so i see all the airlines that come in there from WOAI and i download all of those. I have done that for Atlanta, and Miami, and Tampa and Detroit as well but there are still plenty of foreign airlines that dont come here so I guess it best to just start building them as you begin to fly to the UK for example. leaving them off until that happens. Correct?

You can take that approach, though I personally prefer to install all the packages, and several other airlines and military packages that I install manually.
That way if I want to fly South America today, Asia tomorrow or Europe Wednesday - I don't have to add anything to have correct localized AI.
Extra AI aircraft and traffic files do impact load times as mentioned above. It can also impact how quickly the Select Aircraft screen displays if the AI aircraft are not setup correctly.
But I find that minimal compared to the work I would have to do if I tried to manage AI by regions.
No one has mentioned hard drive space. That used to be an issue for many FS2004 folks - but with today's cheap terabyte sized hard drives, it is much less of an issue. 10-15-20 GB or larger AI installations are not uncommon today.
