Whats the "rules" for the big guys (737,757,etc) deploying there flaps for landing? Besides recommened airspeed do they waite until there on final to drop them all the way down or just to 30degrees like on the 737 or during decent or whatever?

I'd quite like to know that myself, I've always deployed them while slowing down after I decended below 5000.

I would assume it varies from aircraft to aircraft. The RJs i've been on often don't start extending flaps until 5-7 miles on final, whereas with the 734 (at least the DF 734 manual says this), you start extending flaps with intercept course to the localizer...or, 12 to 15 miles out (you're setting flaps 15 right when the CL-65 I am a regular passenger on is starting to extend theirs).

Flap extension can vary depending on the airport used.
If ATC does not rush you, one usually extends the flaps in stages about 10-15 miles out. On the B737 localizer intercept is flown with 2 or 5 units of flap. As the glideslope comes "alive" the landing gear is lowered and flaps 15 selected. When 1 dot above glideslope, flaps 25 is selected and flaps 30 when on the glideslope.
The B727 is similar except that the localizer is intercepted with flaps 15.
However some airports demand a different approach. In Sion (LSGS), Switzerland, the glideslope is very steep (6 degrees). In that case we lower flaps and gear all the way and slow down to minimum approach speed well before entering the glideslope.
Other airports like to get as many airplanes in as they can. In such cases the approach controller will issue certain speeds to be flown. The required speeds will then dictate what flap settings must be used.

I think it's not a case of where, it's more how fast you can go at that point. I fly on 75's all the time. Usually about 15 miles out they'll put 5 flap into it. Only until maybe 6 miles out and they put the gear down to they fully extend the flaps. And it slows them down like crazy because it partially blocks the thrust from the engine. Since ATC in FS doesn't require speeds changes I would just fly on feel. And at large airports, you better believe speed is a major factor. If your stacked 4 back on final, App. is constantly tell the lineup speeds.

I was on an A320 flight to Alicante about 2 months ago. The captain used the fist notch about 10 mins before landing, dropped landing gear at about 3000 ft then turned onto ILS approach and then full flaps. Same on the return journey into Manchester but with visual landing. Hope this helps
Flew on the DC-10 back in 2001. Captain had flaps out a bit a while before we were actually where I would consider us to be 'on final' (then again I wasn't in the cockpit, I would not know), but man, were the spoilers out for most of the descent!

I talked to a British Airways 747 pilot and they use 25 deg. for VFR landings and 30 for Instrument.
