I use both. SP1 was a performance update that had most benefits, but SP2 included a few more performance advantages such as better support for multicore CPUs, etc.
I can see little reason why one would not want to install them (Unless you have the acceleration pack that includes them).
Flight Simulator X Service Pack 1 addresses these post-release customer concerns:
- Activation and installation
- Third-party add-on issues
- Performance enhancements
- Content issues
SP2 amongst other things includes better multi-monitor support and a DX10 preview mode (though it's too buggy for most).
