If you're looking at Vista and Windows 7, definitely go with Windows 7. While Vista wasn't bad (certainly not terrible as many claim), Windows 7 is better in every way. Both are going to require that you relearn how some things are done on the system and where some things, like control panels, have been moved to.
Unless you have some add-on or other program that absolutely won't run on a 64 bit system, you should go for the 64 bit edition. The most obvious advantage is access to more memory and a larger virtual address for the system to use. Combined with FSX SP2, virtually all out of memory errors will be eliminated. Anti-virus programs in particular need to be updated to a 64 bit version, though most have done this by now.
Yes it will. I was worried my REX wouldnt work while upgrading XP-Vista but it did.

The best place to find out is the developer's site. Most add-ons will work, but there are some, usually ones using older code for gauges or a 16 bit installer, that won't.
Thanks. I wasnt real happy when I switched from XP to Vista, so I want to be more careful with what I select this time around.

i have experienced a peformace increase, (ok only a few fps but it is still an increase)
as loki said, the 64bit is the better choice, but when you purchase win 7, you do get two disks,

your add ons should work fine,
as when i up graded from vista, all i done was move my whole fsx folder from window.old to the new location
