Can FSX (stock/default) load an approach STARS flight plan into the GPS ?
Can FSX (stock/default) load an approach STARS flight plan into the GPS ?

No
But if you know the waypoints, you can use the FSX flight planner to add them in
When you create a flight plan you can click and drag waypoints onto your route

Not unless you can do it via the FSX Flight Planner. I do not believe there are even SID or STAR's in the default FSX database are there? I never use the default GPS, are they even listed?
I have added a SID and/or Star manually via the FSX Flight Planning map, thus it/they will become part of the flight plan, but to be honest, that is pretty rare as I do not fly 'the big iron' into large airports; But, I do occasionaly check them out if appropriate even when flyng GA.
There may be third party flight panners that can create a route with a SID or STAR, then convert that into an FSX flight plan file, but I am not sure what programs are availiable. Others may help here.
........
Ryan beat me to it!
Yes, RXP's GNS units. As they use real world database (trainer version), they include SID and STAR's...typically, and will fly them as published via GPSS.
But....you have to enter a plan into the RXP units separately, just like the real world, and there is no way to export that plan into FS. Thus, if you want ATC to follow your plan during an IFR flight, you still have to get those SID/STAR's into your FS flight plan. Thus, when flying IFR (I use Radar Contact), I have to mimic my RXP route into an FS plan, so have to plan ahead anyway.
There are Flight Planning software 'out there' that can probably do this more efficiently, but again, I do not use any...instead I use a real world flight planner, utilize that info, and manually install that plan into FS and my RXP units.

Which package are you using ? the 530 ?
Have you seen these packages ? http://www.simflyer.net/

I use the 530, 430, and many of the 'steam gauges' and navigation radios/gauges in some aircraft (FSN and FLT packages).
Now, some, (myself included), are having 'issues' with the 530 display ('red airplane issue'; see the RXP forums), but some are not. I suggest you read the thread about this in their forum to get an understanding on how many are effected. In addition, Jean-Luc, who owns, runs, creates, and maintains RXP has been absent sine the end of January, and nobody has a clue why. He was in the midst of trying to resolve the issue when he stopped showing up on the forums for further assistance.
Consider yourself warned. Oddly, the same issue has not effected the 430.
