Has anyone had any experience and/or luck operating the G1000 glass cockpit in FSX (specifically in the 172) using Key2mouse? What works - what doesn't???
I haven't tried that, but all of the buttons and knobs have FSX command variables that may be mapped to the keyboard. Look in the SDK for a listing, or "unzip" the G1000.CAB file to a folder and load the g1000pfd.xml file in notepad.exe
Look for the section at the end of the file named <KeyMap>
Using those key events, such as G1000_PFD_ENTER_BUTTON, you can edit the controls.xml file to assign them to a keyboard shortcut.

Once that's established, then I should be able to activate the options thru a keyboard emulator.

You bet! Although I've never used it myself though, I've recommended Key2Mouse to many folks over the years and have had nothing but good reports back from them.
For your specific purpose though, I truly think a keyboard emulation would be more robust and easier to set up.
