In most cases an aircraft won't show up if there is no Panel associated with it, and generally AI aircraft are for "colour" and not to be flown, so tend not to have a panel. You can check this for the AI Aardvark planes.
They should show up if you alias a panel for each of the variations in your Aircraft folder, but understand that the more aircraft are available to be selected in the Aircraft selection menu the longer this will take to appear. Add (for example) several hundred AI aircraft and the delay could be significant, depending on how powerful your PC is.
As you won't be flying the AI planes you could simply alias a default panel (like the C172) in one Panel folder then copy the panel.cfg file to each of the other AI Panel folders.

For FSX - the presence of a panel folder makes the aircraft visible in the Select Aircraft list
For FS2004 and previous versions - a setting in the .AIR file makes aircraft visible in the Select Aircraft list
You can use AirEd, BBQHide or AITM to change the value of register value 105 on an aircraft .AIR file.
BBQHide is a batch program. In AITM it is in the aircraft editor.
AirEd.zip is available in the library - yes it's an old program but does this function very well.
Register 105 has thee aircraft types as possible values - 0 or 1 or 2 - the types are usually defined as:
0=Normal
1=Helicopter
2=Non-flyable
The functionality is:
0 = Aircaft will display in select aircraft menu, aircraft can be used as AI
1 = Aircraft will display in select aircraft menu, aircraft cannot be used as AI
2 = Aircraft will not display in select aircraft menu, aircraft can be used as AI
As always - make danged sure you backup the .AIR file before attempting to make any edits.
One caution about enabling AI aircraft to be viewed in the Select Aircraft menu. The more aircraft you setup to be viewed in the screen, the longer it takes to load.
If about 25% of AI aircraft for a full AI setup are set to display, it can take 10 minutes or more to load the Select Aircraft screen.
