How do you edit a .air file?
a quick question - what are you wishing to do?
and a long basic answer -
editing an aircraft's flight dynamics (FDE) isn't easy. there is AirEd (seach in flightsim and/or avsim library). there are also some payware editors.
when you change any part of an aircraft's '.air' file you will also need to change parts of the aircraft.cfg.

I just want to slow down a very racy P-3C in taxi and speed up a 727 on take-off, very underpowered.
Think it all has to do with acceleration. Also, is there a way to improve braking?

As far as braking goes; Look for the following in the aircraft.cfg file.
[brakes]
toe_brakes_scale = 1.0 //Brake scalar
turboprop simulation is really bad in FS. these aircraft always seem to 'jump' ahead on the ground.
you need to play withe prop pitch settings and thrust. the sweet spot is hard to find. others that fly this aircraft sim need to comment.
who is the developer/designer of the 727?
i've never seen any comment that FXA or FSsp2 changed how the sim modeled aircraft FDEs.

I will try your advice on the turbos.
The other plane is a 737; I mistyped it as a 727, sorry. The model is by Erick Cantu, FDE by Mike Baumann, and Paint by various. It was converted from FS9 to FSX by Reinaldo Anders.
Also, I meant acceleration, as in speed increase, not Acceleration, the game version.
