727 Baggage doors

Is there a key stroke for opening the cargo holds on the 727?

The cargo doors are activated by the wing fold command. You need to assign this command as it is not assigned by default.

Actually if you are talking about the cargo door on the passnger version, I believe that's the "Tailhook" command.
