Yes, it is possible, but the panel should be designed with that in mind. An example is the R4D, which is a dual (Capt/FO) panel.
Also the framerates will drop depending on video card power.
You can use as many additional monitors as available PCI slots are in your PC. If you have yet to make your multimonitor setup try this site: http://www.realtimesoft.com/multimon/

I have used two only.
Lets consider two monitors:
1)Search FlightSim.com file libraries and look for separete panels for the Capt and FO by the same designer. Eric Ernst (767 Pic)designed some of theses for FS98 and someone updated them for fs2000/fs2002. Look for the saab2000 as an start.
2)Combine the Saab2000 Capt and FO panel.cfg/BMP files in a single file/folder. Study the R4D panel.cfg as a reference.
3)Be careful with duplicated gauges. In fs2k2 it will be necesary to rename the 2nd copy of the gauges (i.e. FO gauges) so the panel won't crash fs2k2. Be sure to use the new names in the FO portion of the panel.cfg.
4)Undock the FO panel and drag it to the second monitor. Now you have two panels, one in each monitor.
5)Ups, I forgot the 2nd 3D window. I am not sure if you can undock them :-0 Let me test this first.
6)if step 5 is not an obstacle. You will be able to drag the second 3D window to the 2nd monitor. You are done!
