I want to edit one of the Cessna aircraft in gmax. How can I do this?

If you're talking about the default FS2002 aircraft - you can't.
For just about any aircraft, you really need the source file.

Doesn't FS2002 Pro come with some GMAX source files? In my C:\FS2002\gmax\Samples\Aircraft folder I see the MD83, Dash8, and PA28 180 GMAX files, and I can open these up and see them in GMAX. The sample files include the animations and all.

Yes - those are the sample source files, which are useful to get a feel for how MS does things. ... You can, of course, use those to modify and generate your own versions.

I wish they included the C208 source file so I could remove the windows and voila! C208 Cargomaster. Dreams...
