From a local point of view, a hurricane is just a certain strength of wind blowing from a certain direction. I don't see why it couldn't handle that...

Actually no. One, when flying, we don't stay "local" very long but more importantly, the direction and velocity of the wind as well as turbulance and rainfall vary dramatically over very short distances and particularly around the "eye wall" which is literally a cylindrical wall of clouds that surrounds the eye.

In the eye, it is dead calm and often a clear blue sky above. Then all hell breaks lose as the eye moves. I think it would be exceptionally difficult for FS to model anything resembling the real thing.
