I`m in the process of having a new computer put together, and was wondering if it`s possible/feasible/worthwhile to have fsx sim files split so that scenery and associated files run via one card and to be able to run aircraft files via the other .....to improve frame rates while running with 3 monitors
No, what you are suggesting is not possible. The closest thing to this is an SLI or CrossFire setup. These however just split up the rendering load by alternating frames between each card, or by splitting up each frame. Each video card still has to have all scenery and aircraft data available as you need to render each scene all at once.
SLI/CrossFire don't help much until you get to very high resolutions like those used on 30" LCD monitors or when using a TripleHead2Go with 3 22" monitors as the sim is CPU bound.

I don't know about that. But, you could have a graphics card for each moniter!
